Serves 4 People
Ingredients
- 8oz Diced Chicken
- Olive Oil for frying
- 1 onion, finely chopped
- 4 cloves garlic, finely chopped
- 2 Litres Fish Stock
- 2 large pinches of Saffron
- 1 teaspoon Paprika
- 500g Rice
- 2 handfuls of frozen peas
- 10 King Prawns
- 10 Mussels (scrubbed)
- 250g Seafood Mix
- Salt & Pepper

Method
Sear Chicken in hot pan in small amount of oil till brown.
Add onion & garlic, keep stirring so it will not burn.
Meanwhile heat fish stock & infuse with Saffron.
Add Rice, Paprika & Stock then cook on medium heat.
After 20 minutes add Seafood Mix, Prawns & Mussels.
Cook for a further 10 minutes.
Season to taste, then serve.
