Apple & Raisin Slices

Ingredients

  • 1 lb Wholemeal SR Flour
  • 4 oz Hard Margarine
  • 3 oz Lard
  • Pinch of Salt
  • 2 eggs
  • 1lb peeled, cored, chopped apples
  • 5 oz raisins
  • 5 oz brown sugar
  • 1 tsp mixed spice
  • Milk to mix



Method

Rub the fats into the flour until it resembles
fine breadcrumbs.
Then weigh 15 oz of this only,
mix in other ingredients thoroughly.
Turn into greased swiss roll tin.
Bake for approx 40-50 minutes at about 180C 375F.
When springy to touch, cut into 16
Bake for a further 5 mins.
Cool on wire rack.

Nice with coffee, a picnic, or warm with custard, cream or ice cream

The remainder of the pastry mix can be frozen to used as a crumble topping

  • 2 parts pastry mix
  • 1 part porridge oats
  • 1 ½ parts brown sugar
  • Maybe bit of ground ginger (especially for rhubarb or apple)
